Georgia Apple Cake:

Cake:
2 cups sugar
3 eggs
1 1/2 cups oil
1/4 cup orange juice
1 tsp baking soda
1/4 tsp salt
1 Tbls cinnamon
1 Tbls vanilla extract
3 cups peeled and finely chopped apples
1 cup shredded coconut
1 cup chopped pecans
Sauce:
1/2 cup butter
1 cup sugar
1/2 cup buttermilk
1/2 tsp baking soda

Preheat oven to 325 degrees. Generously grease a 9"x13" pan.

In a large bowl, combine the sugar, eggs, oil, and orange juice, flour, baking soda, salt, cinnamon and vanilla; mix well. Fold in apples, coconut, and pecans.

Pour the batter into the prepared pan and bake about 1hour, or until the tester comes out clean.

Sauce:

Melt the butter in a large saucepan, stir in sugar, buttermilk, and baking soda, and bring to a good rolling boil stirring constantly. Boil for 1 minute. With a fork a skewer poke wholes into the cake when it first comes out of the oven and pour the sauce directly over the hot cake. Serve warm or room temperature.

This cake is a great traveler; it can be served warm or room temperature, and can be made the day before.
