Apple Walnut French Toast

Makes: 2-9" loafs

Serves 8-12

1 cup softened butter
2 tsp. Baking soda
1-1/3 cups sugar
1 tsp. salt
4 eggs slightly beaten
2 tsp cinnamon
4 tsp. Vanilla
4 cups coarsely grated tart apples
4 cups flour
1 cup chopped walnut
2 tsp. Baking powder
2 Tbs. Orange peel

In a bowl, beat butter, sugar and eggs until light. Add the apple, nuts and orange rind to the cream mixture. Sift dry ingredients and add to the wet ingredients. Mix, batter will be quite stiff. Turn into 2 well-greased 9"x5"x3" loaf pans. Bake at 350 degrees for 40 minutes or until done. Cool. Slice in 1" slices right before you are ready to make the French toast.

Soften 1 cup of butter and mix in ½ cup of orange marmalade. On a piece of parchment paper form butter mixture like a jelly roll. Freeze. Remove from freezer 15 minutes and slice into wheels.

Dip apple bread slices into an egg wash grill until golden; serve with butter wheel and orange slice.
