Roasted Jalapeno Pancakes with Avocado Butter

1/2 cup flour
1/2 cup self-rising flour
1 egg, slightly beaten
1/2 cup milk
1-2 (depending on how spicy you like your food) roasted jalepenos, finely chopped

Avacado Butter
1/2 ripe avocado
1/2 cup butter, softened
1 tablespoon lime juice
1 tablespoon cilantro, finely chopped

Sift the flour into a large bowl and make a well in the center. Gradually add the egg, milk and jalepenos, whisking until the batter is smooth and has no lumps.

Heat a frying pan and brush with melted butter. Drop teaspoons of batter into the pan and cook until bubbles appear on top. Turn and cook until golden underneath. Keep warm.

Mix the avacado, butter, juice and cilantro in a small bowl until smooth. Spread on top of the pancakes and serve.
