Mediterranean Chicken Pasta

2 teaspoons olive oil
1 1/2 cups chopped onion (Vidalia or other sweet onion is best)
4 cloves of garlic, minced
1/3 cup water
l lb fresh spinach, coarsely chopped
2 cups chopped fresh Roma tomatoes
2 cups cooked chicken breast, cut into bite-sized pieces
3-4 tablespoons good balsamic vinegar
1/2 cup bacon, cooked and crumbled
4 cups hot cooked angel hair pasta (about 1/2 lb. dry)
1/4-1/2 cup shredded Asiago cheese

Heat oil in large skillet; add onion and saute about 2 minutes. Add garlic
and saute about 1 minute. Add water and spinach; cover and cook about 2-3
minutes or until spinach is wilted.
Add chicken, bacon, and vinegar to skillet mixture and cook 1-2 minutes
until thoroughly heated. Pour over hot pasta, add cheese, and mix
together.
May serve with extra cheese. 4 servings.
* Note: be sure to have all ingredients chopped and ready to add before
you
begin cooking, as this cooks very quickly.
