Antipasta Panini:

Ingredients:
8 slices sourdough loaf
butter
olive oil
8 slices mustard cheese (or cheddar, gouda)
1/4 cup chopped green olive
1/4 cup chopped pepperchini
1/4 cup chopped red pepper
1/4 cup chopped artichoke hearts
1 cup mushroom
1/2 cup chopped onion
1/2 cup sliced salami
1/2 cup sliced capocollo
1/2 cup sliced pepperoni
1/4 cup chopped provolone cheese
Assemble:
-butter outside of sliced bread
-mix in a bowl olive, pepperchini, red pepper, artichoke hearts
-saute mushrooms and onions together until carmelized, mix in same bowl with
vegetables.
-put sliced cheese on inside of four slices of bread. then add each meat and
spoonful of vegetable mixture, top with remaining cheese. place top slice of
bread onto the cheese. Butter side out.
-heat grill saute pan until hot add
oil, place sandwiches in pan and weigh down with another pan. Cook 3-5
minutes until you get the desired grill marks. Turn and grill an additional
3-5 minutes. Serve sliced with ceasear salad and a light chianti.
